The Mastix shrub (Pistacialentiscusvar. Chia) is an evergreen shrub that grows 2-3 meters high. Its lifespan is more than 100 years. Before the process of obtaining the liqueur begins, the weeds, leaves, and soil are removed from the ground. Then comes the "asprochomatisma," or the covering of cleaned soil with white, fine sieve soil, which is collected from nearby areas and is then ready to absorb the "Mastix tears." The scratching of the shrub (gr. "Kentima") is a special process that has remained practically unchanged for centuries. A sharp tool called "Kentitiri" is used. It looks like a curved pickaxe. The resin of the shrub slowly drips onto the sand and hardens there. The collection must be completed before the first rains begin. The "tears" are cleaned and then processed into a wonderful liqueur.
